Hungarian spit cakeKurtoskalacs (Hungarian: [ˈkyrtoːʃkɒlaːt͡ʃ] (); sometimes improperly rendered as Kurtosh Kalach; Romanian: Colac/Cozonac secuiesc; German: Baumstriezel) is a spit cake specific to the Szekelys of Transylvania.[1] Originally popular in the Hungarian-speaking regions of Romania, more predominantly the Szekely Land,[2] it became popular in both Romania and Hungary.[3] The first written record dates back to 1679 and was found in the village of Uzdiszentpeter (now Sanpetru de Campie), while the first recipe appears in a manuscript cookbook dated in 1781.[1] Earlier a festive treat, now it is part of everyday consumption.[4] In Transylvania, a similar pastry to Kurtoskalacs is Baumstriezel, originating from the Saxon communities.
Kurtoskalacs is made from sweet, yeast dough (raised dough), of which a strip is spun and then wrapped around a truncated cone–shaped baking spit, and rolled in granulated sugar. It is roasted over charcoal while basted with melted butter, until its surface cooks to a golden-brown color. During the baking process the sugar stuck on the kurtoskalacs caramelises and forms a shiny, crispy crust. The surface of the cake can then be topped with additional ingredients such as ground walnut or powdered cinnamon.[5]

The name refers to a stovepipe (kurto), since the fresh, steaming cake in the shape of a truncated cone resembles a hot chimney.
This opinion is shared by Attila T. Szabo [hu], scholar and philologist from Cluj-Napoca: "...when taken off from the spit in one piece, the cake assumes the shape of a 25–30-centimetre [10–12 in] long vent or tube. Since the cake is served in this tubular form to family and guests, and consumers are faced with this typical, vent-like image of the dough to be torn off in strips, it is self-evident that its name must have been given with regard to the vent shape of the cake".[6]
Throughout the centuries, miscellaneous alternate names and spellings of "kurtoskalacs" have been used. More references were mentioned even in the 19th century (e.g. dorongfank 'spit-donut' or botratekercs 'stick roll' or botfank 'stick-donut').[7] The name "kurtoskalacs" originated in Transylvania and became popular only by the middle of the 20th century. Until the end of the century it had different spellings (e.g. spelt with ‘o’ as in kurtoskalacs ('horn cake') or in two words, as in kurtos kalacs.[8] The present variant "kurtoskalacs" was first used in print in a cookbook, published in 1926 by the book department of 'Brassoi Lapok’, a newspaper from Brasov.[9]

Kurtos kalacs or Kurtoskalacs is a Hungarian pastry also known as chimney cake, a stove cake or Hungarian wedding cake. It is baked on a tapered cylindrical spit over an open fire. Originally from Transylvania, it is famous as Hungary’s oldest pastry. They are sold in bakeries, pastry shops and more frequently street vendors sell them on street corners, carnivals and fairs.
The pastry consists of a thin yeast pastry ribbon wound around a wooden cylinder, heavily sprinkled with sugar, thus becoming a helix shaped cylindrical pastry or a pastry roll that sometimes tapers very slightly towards the end. It is then baked on a hand-turned, tapered, wooden spit, rolled slowly on the wooden cylinder above an open fire. The dough is yeast-raised, flavored with sweet spices, the most common being cinnamon, topped with walnuts or almonds, and sugar.The sugar is caramelized on the kurtoskalacs surface, creating a sweet, crisp crust. Kurtoskalacs, also known as chimney cakes, are a fun treat to make. They are delicious straight from the oven.
The dough for these Kurtoskalacs is pretty easy to make, and super easy to handle. It's an enriched yeasted dough, with milk, butter, and an egg, and it comes together very quickly.
This recipe was developed from various sources on the internet by Aparna of My Diverse Kitchen. She reports that Kurtoskalacs are known to be Hungary’s oldest pastry. According to Aparna, "Kurtos refers a stovepipe/ chimney referring to the shape of the pastry."
"Kalacs means sweet pastry. These Chimney Cakes are more specific to Transylvania in Hungary and Szeklerland, the Hungarian-speaking region of Romania. They’re also known as Cozonac Secuiesc in Romania."
The dough for these Kurtoskalacs is very elastic. After the first rise, you roll it out and cut it into strips. Then you wrap each strip around a round mold (traditionally a wooden dowel), brush it with melted butter, and roll the dough in granulated sugar. Historically, the dough encased dowels were turned and slow roasted over charcoal.
Once they are baked, you can immediately enjoy them. In fact, they are a favorite street food in Hungary according to Aparna.
I didn't have any wooden dowels to shape these chimney cakes, and I wasn't willing to experiment with my beloved rolling pins, so I decided to use 12 ounce soda cans wrapped in foil to shape these.
Soda cans are probably too fat for authentic Kurtoskalacs, but they are what I had. You definitely could buy sodas in narrower cans (such as Red Bull or those 8 ounce colas) to achieve a more authentic shape.
While you could probably use clean soda cans without the foil to bake these chimney cakes, the foil makes it much easier to remove the Kurtoskalacs without breaking them up. First, the dough does rise while baking, and tightens around the soda can.
You can slide the cans out of the foil by opening one end and pushing the other end to remove the can, and then collapse the foil to get the intact coiled bread.
I tried to make a cinnamon sugar with sparkling sugar and cinnamon for coating these Kurtoskalacs. I'm pretty sure that granulated sugar would work better because the cinnamon didn't quite mix with the sparkling sugar. Thus the patchy spots of cinnamon.
Regardless, these were delicious straight from the oven.
You can serve these filled with whipped cream if you want

The first real thing I baked was banana bread with help of one of our family friends.When I came across this Kurtoskalacs aka chimney cake, a traditional wedding pastry made in Transylvania (Romania), I got hooked. Some of you may have memories associated with this pastry as it is one of the most traditional as well as important street foods in Eastern European countries. Traditionally it is made on a grill or brick oven; nowadays it is made in electric oven.Another coiled treat is the famous Spanish coiled breakfast pastry Ensaimda, a pastry from Majorca, Spain. Even though the traditional recipe uses lard, I used butter here without a filling. First yeast dough is rolled out until extremely thin, butter is spread on one side and the dough is rolled into a rope and then shaped into a coil.Both are brioche kind of yeast dough made it into a sweetened treat. Chimney cake or Kurtoskalacs is famous street food as well as common pastry made in the backyard grill. Since I don’t have grill in my hand, I used both baked and roasted version of chimney cake, both turned out be delicious. I used my only one rolling pin which I have it my hand to make chimney cake, if you want you can make wooden spit here is link to make it by yourself. I tried twice and both time it worked like a charm. So don’t worry about putting your rolling pin in the oven.

I’m back from Transylvania and I just had to share with you my favorite food discovery! We ate these kurtoskalacs twice and I wish I would have had a chance to eat them a few more times!Kurtoskalacs are a traditional Hungarian pastry and, depending on who you talk to, they are the oldest Hungarian pastry. Anyway, there is still a sizable Hungarian population in Transylvania and these yummy kurtoskalacs, which I believe originate from Transylvania, are widely available.So here’s what I was able to determine after eating some of these tasty Transylvanian treats and watching part of the assembly process. They are made with a yeasted dough, similar to a sweet roll dough. The dough is rolled or cut into long strips and then wrapped around a cylindrical mold. Then it gets brushed with oil and rolled in sugar.Now for the interesting part. They get cooked over open coals, kind of like the way we roast marshmallows.The spirals of dough are watched carefully and turned so that each part gets evenly browned. When they are perfectly caramelized, they are taken off the coals and rolled in a topping such as crushed nuts, cinnamon, coconut or colored sprinkles. They don’t have to be rolled in the additional topping, it’s up to you. They taste great with just the plain caramelized sugar glaze!After the additional topping is added, the pastry is slid off cylindrical mold and allowed to cool briefly before being placed in a paper bag and sold to the next lucky customer. The regular-sized kurtoskalacs look huge but since they are hollow, looks are deceiving. I could easily eat one by myself 🙂They also sell them in a smaller size. The small ones are great if you want to sample a few different flavors at once. The first time we visited the kurtoskalacs stand, we bought the small ones and sampled three different flavors: coconut, cinnamon, and pecan. They were all great but I think I liked coconut the best. Our friends tried one with sesame seeds and loved it!The second time we visited the kurtoskalacs stand, I decided I had to get a large one.
