It doesn’t  matter what suya comes to mind- liver, tripe, fiery hot , spicy; The  thoughts of food linger on  for hours . I don’t  think I can get enough of  eating or thinking about  it.Unless you have been crawl up under a rock, there is no denying you must have tried some form of skewered meat that is grill, broil or slowly cook over an open flame. Suya is the word use to describe this skewered meat in Africa, particularly in Nigeria and Cameroon. It mostly originated from the Hausa people, one of the largest ethnic groups in West Africa. They would set up their Bbq pits  in most neighborhoods , on street corners ,selling  grill  meat , some skewered  others not, till every single stick is gone.Suya is the single most popular street food that most West Africans look forward to eating, as they travel back home. My journey is never complete without countless sticks of suya, piping hot, just off the grill.There are several ways of making  suya, the  key ingredient in suya is good quality meat. I experiment a lot, using whatever cut I can get a good deal on at the market, and I use mostly sirloin , chuck roast and ribeye roast. You need meat that is tender, fatty, and beefy and easy to cut into uniform shapes.In this recipe, ground peanut is mixed with garlic, onion powder, cayenne, smoked paprika, chicken bouillon powder, white,  and hot pepper. The ground peanuts add an authentic taste and an unmistakable flavor to the spicy blend and that is what makes it uniquely African and of course the fiery pepper  add a spicy kick to this street food. You may omit the extra hot pepper.Serve warm or at room temperature with onions, tomatoes .Recipe update – cooking time was reduced from 20 minutes to 15 minutes to produce a juicy and tender suya

Suya or tsire is a spicy meat skewer which is a popular food item in West Africa.[1] It is also eaten in Sudan, referred to as "Agashe".[2] Suya is generally made with skewered beef, ram, or chicken. Innards such as kidney, liver and tripe are also used.[3] The thinly sliced meat is marinated in various spices which include peanut cake, salt, vegetable oil and other flavorings, and then barbecued. Suya is served with extra helpings of dried pepper mixed with spices and sliced onions. Halal meat preparation methods are normally used, especially in the northern parts of Nigeria,[3] where the suspicion of nonconformity to Muslim dietary prohibitions in Suya preparation has been known to cause riots.[4] A dried version of Suya is called Kilishi.[3] It can be eaten with Garri or Ogi.
There is no standard recipe for the production of the complex mixture of spices and additives which make up the Suya marinade (called Yaji) and the spice mix served with it. Ingredients may vary according to personal and regional preferences.[3]
Although Suya originated in the Northern parts of Nigeria, it has permeated the Nigerian society, being affordable for all and available everywhere. It has been called a unifying factor in Nigeria.[5] Suya has become a Nigerian national dish with different regions claiming the superiority of their recipe and methods of preparation, but similar grilled meat recipes are common in many West African countries.[3]

I have been enjoying it since my 14th birthday, right before I learned what zo meant in the Hausa language.In the last few weeks, we have been talking about Hausa foods and it will continue for another couple of days before we switch to popular Yoruba recipes and how to make them.Suya is actually easy to make, as long as you can lay your hands on the spice and any meat of choice. Usually, it was made with beef but in recent times I have seen chicken suya and even that from bush meat. 😀This recipe is for both the beef and chicken version of suya.Here is what it really looks like. I made this some days back in my kitchen. As I said, it is really easy; as long as you can find the necessary ingredients.Ingredients For Nigerian Beef SuyaBeef (1KG)
Suya Spice
2 seasoning cubes
Salt to Taste
Ground dried pepper (optional)
Suya sticks (optional)

It is actually possible to mix your own suya spice but it is not necessary if you live in Nigeria. If you don’t live in Nigeria you can still purchase the spice from most online shops.
I live in Port Harcourt Nigeria and I purchased mine from Hausa suya makers at Okija/Ikwerre road, mile 1, Portharcourt. You can always ask the friendly ABOKI for directions. If you get the main spice, you can be sure to make the exact kind of beef suya that you love.
How to Make Suya
Wash the beef properly and slice into thin fillets, you can easily do this with a kitchen knife. You can see the picture below. If you are using chicken, you just need to apply the spices to the chicken, you don’t need to slice into fillet as is the case with beef.Transfer 5 spoons of the suya (spice) to a clean dry plate and add 2 seasoning cubes plus a half teaspoon of salt to it, mix them properly together, and set aside. You will need to taste to ascertain that it actually tastes like what you get from the mallam.Stake the beef on the sticks and sprinkle the mixed spice all around it, sprinkle evenly on both sides, and commence

I overlooked the raw meat on the side of the road and just figured the heat would kill anything that should not be there. It was delicious. Serving size is a guestimate.
