¿Como hacer tortilla paraguaya?
La tortilla paraguaya a pesar que comparte nombre con la tortilla mexicana, en realidad se trata de una preparacion totalmente distinta. Sharing is caring!Paraguayan tortillas called Payagua mescada is a hearty deep fried fritter that is often served as a meal by itself.  It is believed that it originated after the triple alliance war back in the  late 1800’s.  Food was scarce and so one dish hearty meals became popular.  Although this is called a tortilla, it is not what most people consider a tortilla.  It is more like the Spanish tortilla which makes sense since Paraguay gained independence from Spain in 1811.Paraguayan tortillas are also called lampreado or lambreado.  We had it as the starter for our International Cuisine meal and it did not disappoint. Las tortillas paraguayas son muy versatiles sirven para el desayuno, como media manana, como acompanante de calditos o sopas, acompanante infaltable del soyo o la ensalada de poroto, a algunos les gusta con cebolla, a otros con mucho queso, otros le agregan arroz, etc. Aqui nuestra receta– 6 huevos – 200g de queso paraguay (o queso tipo fresco) se puede deshacer con las manos – 1 y ½ taza de harina (puede usarse a veces una leudante, pero no es necesario) – Leche, cantidad necesaria (se puede reemplazar por agua) – Sal a gusto
PREPARACION
Se baten bien los huevos hasta espumarlos bien, se les anade sal y el queso paraguay deshecho con los dedos, se le agrega la harina y de a poco la leche mientras se mezcla todo, obteniendo una masa como para bunuelos. 
Se frien en una sarten (paila) con no mucho aceite, como si fuese un gran panqueque. Al estar listas de un lado se dan vuelta y luego se escurren en un papel absorbente. 
Ideales para acompanar un “soyo” o simplemente para comerlas asi solas. 
Opcional: pueden llevar cebolla de verdeo picado en la mezcla.

The next time you make a pot of comforting soup, why not try my Aunt Nuni’s recipe and fry up some tortillas as a side dish?TORTILLAS PARAGUAYASServings: 10 to 12
Ingredients:
4 eggs, beaten
1 cup whole milk
2 cups all-purpose flour
1 teaspoon salt
1 cup mozzarella or farmer’s cheese, cubed
1 cup leafy greens such as kale, spinach, or chard, chopped
½ cup vegetable oil
Preparation:
Whisk the eggs, milk, flour, and salt in a bowl until smooth. Stir in the cheese and leafy greens. Turn your stove on to medium and heat the oil in a saucepan. When the surface of the oil begins to shimmer, test it by dropping a tiny bit of batter in the pan. If it sizzles, spoon about ⅓ cup of batter at a time into the pan, leaving about 2 inches between tortillas. Fry the tortillas for 3 to 4 minutes and then turn over each of them with a metal fork. Continue to cook the tortillas until they are golden brown on both sides. Remove the tortillas from the oil and allow them to cool on a plate lined with paper towels.

What is the origin of sopa paraguaya ?
Indeed, sopa paraguaya is anything but a soup! The origin of the recipe dates back to the tradition of the Guarani indigenous people to eat meals prepared with corn flour (or mandioca, tapioca flour) wrapped in guembe or banana leaves cooked on hot embers. From this basic recipe, the Spaniards introduced cheese, eggs and milk.There are various stories about the origin of the name of this iconic Paraguayan recipe.The first one is attributed to Don Carlos Antonio Lopez, who was the president of Paraguay between 1841 and 1862. President Lopez liked tykueti, a white soup that was prepared with milk, cheese, egg and corn flour. At the time, it was a dish that was often served at Paraguayan tables.One day, the machu (cook) made a mistake and added more cornmeal to the soup than usual. The tykueti was therefore too thick. But the main issue was that there was no time to make another soup.This is when she decided to put the preparation in an iron skillet and cooked it in the tatakua (“fire hole”, similar to a tandoor oven). The end result was a “solid soup”. When the president tasted it, he loved it so much that he immediately named it sopa paraguaya (Paraguayan soup).A variant of this version relates that President Lopez had invited ambassadors from other countries to dine and, as the dish was served, he presented the dish as the “Paraguayan soup”.Years later, his son Francisco Solano Lopez, also president of Paraguay from 1862 to 1870, was serving the sopa paraguaya karai in memory of his father, and the sopa paraguay palaciega (palacial Paraguayan soup) in honor of his wife Elisa Alicia Lynch.Another version relates that when the Spaniards arrived to Guarani lands, the natives received them with honors and offered them their best food to entertain them: game meat. When the meat ran out, and as the guests were still hungry, the Guaranis served them the food they usually ate, which was made with corn flour (or cassava) wrapped in banana leaves, cooked on fire. As they served their food, they shouted “So’o opa”, which is Guarani for “the meat is finished”. The Spaniards understood “sopa” and the rest is history!
